Religion is still alive and well in the future according to Phlox. He said he enjoyed exploring Earth religion and attended Mass at St. Peter's. (Can't remember name of episode).
The NX-01 crew is very lean and so I don't see the lack of a chaplain as any kind of statement. Roddenberry was a Buddhist according to what I read, even though he was anti-religion. Not sure how you can reconcile that. I'm attending a festival at a Buddhist Temple tomorrow and the members there certainly consider their beliefs their "religion," although from what I understand not all Buddhist sects do. (This is a Pure Land Temple)
We know a memorial service was held for baby Elizabeth. Who would conduct that? A Starfleet chaplain? Maybe, maybe not. An Admiral. A Vulcan priest? A combination?
I have to agree on the whole ship's councellor, thing. Even though I like Denna, I never thought she should be on the bridge as much as she was in that capacity.
