Why T'Pol?
Does anyone know of a fic or thread that speculates as to why this particular Vulcan was chosen to accompany Enterprise?

That's actually a really good question.
I thought you were going to ask "Why would Trip go after T'Pol?" as opposed to maybe initially finding interest in some human female before he and T'Pol got the chance to hit some of that *SPARK*!
I actually think that'd be a neat Fan Fiction Challenge for the Library of P'Jem:
Write a scene in which T'Pol is chosen/recommended/requests/assigned for the position of liason from the Vulcan High Command to the Enterprise.

I was thinking in terms of what the XenoAntrhropolgy (sp?) Department of the Vulcan Science Academy might have in terms of input, if any. Were they consulted? What was Soval's input? How was the decision made?

Indeed a good question.
Many things can be implied.
T'Mir... May it have a certain worth the fact that T'Pol is offspring of T'Mir?
And Destiny?
Vulcans don't believe in destiny, I think. But it's another fact that T'Pol's family is connected with Earth.
Maybe... Destiny wants to play its own unfathomable game, and Trip and T'Pol are the core.

Yes! The granddaughter of T'Mir. So T'Pol is curious about other worlds and knows not to just automatically buy the party line. She is an independent thinker without being overt about it and alienating the higher ups.

Like CX pointed out, some people have already addressed it. The show had Trip griping to Archer that they got the Vulcan database, and in return the Vulcan's got to put a spy on their ship. Remember that T'Pol had a background with the Security Directorate. Which at that time the Humans did not know about. It would be the perfect cover, to put a diplomatic liason aboard who just happened to have experience as a security operative.

Wasn't T'Pol an aide or attaché of Soval? Remember the first scene with her, when Archer said something about knocking her on her ass. So it stands to reason that the Vulcan ambassador would chose his trusted aide as liason to the NX-01. She also had the formal qualifications, being a scientist and previously having been a spook. Also, since the NX-01 launched ahead of schedule, there just weren't time for authorities back on Vulcan to intervene and pick another candidate, had they so wished. And then they were stuck with Soval's choice since the NX-01 kept going instead of returning to Earth.
She's got an awfully nice bum!

In my mind, I'm inclined to think T'Pol worked in secret, even without daring to speak clearly to herself, so as to be assigned to Enterprise,

Hmmm...I considered her scientific, security and diplomatic backgrounds, but I had almost forgotten the possible influence of her grandmother. From the "keepsake" scene, it's obvious that she revered T'Mir.
And Soval obviously thought she was a very promising diplomat.
