So do red beans and sausage (or ham, or Tasso). Just soak the dry beans overnight, pan cook the meat (works best if it's smoked and fatty), cook some chopped onion and bell pepper in the grease from the meat, season well with your favorite creole seasoning blend (I like reduced sodium Tony Chachere's creole seasoning) throw it all in the crock pot and simmer all day til the beans are done. I usually put about a half cup of beans in the blender once they're done and pour the puree back in to get them really creamy, and serve over rice. Yum.

I'm not sure soy will work since it won't render, but you can always sauté the onions and bell pepper in a little oil and just use the chorizo for flavoring.
