I didn't know we did that. Well, I knew we helped out in Europe a bit after the war, but this Swedish white bread thing was new to me. So it's labelled that in grocery stores even now?

Hey, KTR, can you tell me why cardamom seems to be so key to Scandinavian dishes? It's certainly got a strong taste. I've heard it also gets put in the coffee sometimes? My husband was NOT a fan of the limpa I made. (Though I enjoyed it.)

I made English granary bread too, which he liked better. To me it was a little disappointing compared to the stuff I'd had in England. I'm going to add malt syrup next time and see if it's closer to what I remember.

I am so not the person to answer this. I'm certainly not a very good cook. My skills and repertoire is pretty limited.

I am not under the impression that cardamom (or "kardemumma" as we say) was that common here compared to other countries. And I've not heard about it being put in coffee... :wtf:

Limpa? Well, that's a Swedish word that just means loaf (of bread). Was it a particular kind of loaf of bread that you made? A Swedish one? The use of the term "limpa", while generic, is mostly for a very simple kind of bread that's often somewhat sweet and, frankly, a bit spongy and/or rubbery in texture. I'm not very fond of it.

It was a loaf made with white and rye flour with cardamom, anise, orange zest and honey in it (and cardamom and anise and sugar on top of it). Maybe it's actually Swedish the way English muffins are English (i.e. not really). Definitely not spongey.

I ground my own cardamom because I only had seeds, so maybe I didn't get the grind small enough or something -- it's definitely got a very astringent effect. I found myself wondering how the heck anybody anywhere had ever decided "Oooh, this will be good to eat" as opposed to "Ooh, maybe this will cure consumption." Though I did get used to it.

This is from a recipe book where you make enough dough for four loaves and then bake them as needed through the week. Which gets a little problematic if you don't like the first loaf...

Well, I meant we still call it "Swedish white bread" during history lessons etc. Sorry about the confusion. It made a huge impact and have made many people in my country very postive towards Swedisch people.
